The long-term storage of vegetables and fruit involves inhibiting the ripening and ageing processes, thus retaining flavor and quality. Ripening is delayed by reducing the level of oxygen and increasing that of carbon dioxide in the cool cell so that the respiration is reduced. Lowering the oxygen content inhibits the fruit's respiration. The basic concept of controlled atmosphere is to control aerobic respiration of fruits but, when the oxygen content is too low, the fruit will suffocate resulting anaerobic respiration of fruits which leads to loss of commodity.
Around 78% of the air that we breathe is made up of Nitrogen, so there is no need to make any more. What this machine does is to filter out the Oxygen from the atmosphere, along with CO2, small amounts of other gases and water vapor, to create a supply of virtually pure Nitrogen. Using an injection system this is then pumped into the store, gradually displacing the normal air until the desired level is reached. Air from the store is regularly analyzed to ensure that the atmosphere is maintained within set parameters.

Atmospheric air contains essentially 78% nitrogen and 21% oxygen. Ordinary dry compressed air is filtered and passed through a technically advanced bundle of hollow membrane fibers where
Nitrogen is separated from the feed air by selective permeation. Water vapor and oxygen rapidly permeate safely to the atmosphere, while the nitrogen gas is discharged under pressure into the
Distribution system. Pressure, flow rate and membrane size/quantity are the main variables that affect nitrogen production. Nitrogen purity (oxygen content) is controlled by throttling the outlet from the membrane bundle(s) . At a given pressure and membrane size, increasing the nitrogen flow allows more oxygen to remain in the gas stream, lowering nitrogen purity. Conversely, decreasing nitrogen flow increases purity. For a particular purity, higher air pressure to the membrane gives a higher nitrogen flow rate. Purity ranges of less than 95% to 99% are possible.
